Recipe: Cranberry Nut Orange Bread

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick) salted butter
  • 1 egg
  • 1 tablespoon orange zest
  • 1/4 cup orange juice
  • 1 1/2 cups chopped cranberries
  • 1 cup chopped pecans

Heat oven to 350 F. Grease a 9-by-5-inch loaf pan. In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt. Combine well. Cut in the butter until the mixture resembles coarse crumbs. In a separate bowl, stir together the egg, orange zest, and orange juice. Gradually stir in the flour mixture. Stir just until the flour is moistened. Gently fold in cranberries and nuts. Pour into a prepared pan and bake for 60 to 75 minutes or until a toothpick inserted in the center comes out clean. Transfer to a wire rack; let stand for 5 minutes. Remove the bread from the pan and place it on a wire rack. Cool completely before slicing. Makes 1 loaf.
